Sushi Hotaru Experience and Team
The Sushi Hotaru. a sensory and exceptional dining Japanese Restaurant is currently looking for a Full Time Qualified Head Chef/Chef to join our kitchen team. You will be jointly responsible for all aspects of the kitchen operation as well as assisting in leading and motivating the kitchen team.
Our restaurant is committed to preparing and presenting high quality dishes and services to meet and exceed our customer expectations and we are a well-known restaurant showcasing trendy and traditional Japanese food.

Position: Full Time Qualified Hear Chef /Chef
Main Tasks and Duties:
• Menu developments and product innovation based on seasonality, customer feedback and market trends
• Plan menus and estimate food and labour costs in consultation with the managing department
• prepare and cook the menus of variety of our restaurant’s dishes and food at the high-quality level
• Demonstrate techniques to cooks and advise them on cooking procedures
• Discuss food preparation issues with manager and other staff member
• Checking and ensures that all kitchen equipment is in good working conditions and order
• Ensures that all kitchen utensils are used correctly and with care
• Ensure the proper rotation and utilisation of all items for the kitchen operations
• Keep the last trends of food styles and taste
• Experiment with recipes and suggest new ingredients
• Prepare purchasing lists and selecting the items as a priority, spending amount in the budget
• Check the Inventory and stocktake to regular stock rotation
• Regularly visit (if applicable) fresh fish/vegetable/fruit/meat market with restaurant manager in order to remain informed on new and seasonal produces
• Control food quality, quantity and waste
• Follows instructions and delegate the instructions to the Junior Staffs
• Provide and assist the Junior staff’s tasks, evaluate and review their tasks during the kitchen operations
• Overseeing and estimating the daily kitchen running and organising supplement.
• Supervising and working alongside both kitchen and front of house staffs
• Cultivate relationships with new and existing customers and evaluate customer needs
• Ensure all restaurant areas are maintained to a high level of cleanliness according to HACCP standards.
• Ensure and inspect the restaurant’s facilities and comply with health regulations
• Maintain all aspects of financial reporting for the restaurant on each shift.
Core Capabilities:
• Qualified chef with at least 3 years’ experience in restaurant industries in a variety of hospitality venues (Prefer Japanese Restaurant)
• Certificate IV in Commercial Cookery and Diploma of Hospitality, or equivalent
• Works willingly as part of the team and supervise a team
• Excellent problem-solving skills
• Client and quality focus
• Ability to motivate staff and provide leadership
• Has a positive, cheerful attitude
• Strong communication skills and a genuine passion for Food
• Enjoy working in a dynamic - fast paced kitchen and have the ability to perform multiple tasks at once.
General Information:
Must be PR or Citizen
Full Time Position
Salary: $70,000– 82,000 (+ Super)
