Rio Recipe Pty Ltd is currently seeking experienced and motivated Full-Time Cooks (All level) to join our growing and busy kitchen teams across two locations: Sushi Hotaru (Sydney CBD) and Kumiho (Parramatta). We are looking for dedicated culinary professionals who are passionate about Japanese cuisine and committed to maintaining high standards of food quality and consistency.
In this role, you will be responsible for:
1. Food Preparation & Cooking
- Prepare and cook menu items according to standard recipes, portion sizes, and presentation guidelines.
- Assist and prepare for cutting, preparing, and organising ingredients prior to service.
- Season food during cooking to ensure consistent taste and quality.
- Support the preparation of dishes in line with Japanese cuisine techniques and restaurant standards.
2. Service Cooking & Kitchen Operations
- Carry out day-to-day cooking duties during service periods to ensure timely food preparation and delivery.
- Operate kitchen equipment such as ovens, grills, and fryers safely and efficiently.
- Monitor food during cooking to ensure proper temperature, texture, and quality.
- Assist in maintaining smooth kitchen workflow during busy service periods.
3. Food Quality & Presentation
- Inspect food products to ensure freshness, quality, and compliance with restaurant standards.
- Portion food appropriately and plate dishes according to established presentation guidelines.
- Add garnishes, sauces, and accompaniments to completed dishes as required.
- Maintain consistency in food quality and presentation across all orders.
4. Stock Handling & Storage
- Store food items in temperature-controlled environments in accordance with food safety requirements.
- Assist in receiving and organising deliveries of ingredients and supplies.
- Follow stock rotation procedures (FIFO) to ensure freshness and reduce waste.
- Report low stock levels or quality concerns to senior kitchen staff.
5. Food Safety & Hygiene
- Follow all food safety regulations and workplace hygiene standards at all times.
- Maintain cleanliness of kitchen workstations, equipment, and preparation areas.
- Ensure proper handling, storage, and preparation of all food items.
- Comply with workplace health and safety requirements within the kitchen environment.
6. Special Requirements & Support Duties
- Assist in preparing food to meet customer dietary requirements where required.
- Support senior chefs and kitchen staff in daily operational tasks.
- Follow instructions from senior kitchen staff to ensure efficient kitchen operations.
- Contribute to a positive and cooperative team environment in the kitchen.
Core Capabilities:
- Ability to prepare and cook food according to standard recipes, portion sizes, and presentation guidelines in a fast-paced kitchen environment.
- Basic knowledge of Japanese cuisine and fundamental culinary techniques used in commercial kitchen operations.
- Ability to follow instructions from senior chefs and work effectively as part of a kitchen team.
- Strong attention to detail in food preparation, cooking, and presentation to ensure consistency and quality.
- Ability to work efficiently under pressure during busy service periods while maintaining food quality standards.
- Good understanding of food safety regulations, hygiene standards, and safe food handling practices.
- Ability to perform repetitive kitchen tasks with consistency and accuracy in a high-volume environment.
- Strong teamwork and communication skills to support smooth kitchen operations.
- Reliable and cooperative attitude with willingness to assist senior kitchen staff as required.
- Commitment to maintaining cleanliness, organisation, and operational standards in the kitchen.
General Information:
Must be PR or Citizen
Full Time Position
Salary: $76,515 – 85,000 (+ Super)
